Every now and then, a person comes along, decades ahead of their time, that fundamentally changes the way you think about the future and the planet. One such person is Joost Bakker. We’ve had the privilege of getting to know Joost — activist, designer and zero-waste champion — over a number of years and when he asked for Breathe’s help to create the Greenhouse, of course, we said ‘yes’.
Greenhouse, aka Future Food System, is a self-sustaining, productive dwelling for two that demonstrates the potential of our homes to provide shelter, produce food, generate energy and be ‘zero waste’.
From January 2021 to June 2022, the three-level structure was situated at Federation Square and home to award-winning zero-waste chefs Matt Stone and Jo Barrett where they lived solely off the food and resources produced on-site. Designed to demonstrate how the building’s inhabitants live completely off-grid, produce all their own food, and create zero waste, the structure was ultimately relocated to be the next home for Joost’s mother.
Joost himself designed this beautiful building, the food system, and even helped design the soil mix that would support high yield, nutrient rich food. He worked with local materials, fabricators and agroforestry timber suppliers and sawmills to ensure that every material that was chosen for this project was sustainable, reusable and — importantly — healthy for human habitation. Breathe provided pro-bono support with planning and building permit documentation and building permission liaison. This was a great opportunity for us to help deliver one of Australia’s most innovative sustainability experiments.
Greenhouse’s mission, according to its website, “has the potential to tackle food security, malnourishment and environmental degradation, all whilst turning our urban areas into the most biodiverse on earth”.
